Description
The Champagne Extra Brut Blanc de Noirs Sous Le Mont from the Jacques Selosse maison is made exclusively from Pinot Noir grapes grown in the famous Avize area.
It is the result of a manual harvest of the grapes and fermentation in oak barrels. This is followed by refermentation in the bottle according to the Champenoise method and aging for 6 years on its own yeasts.
It presents itself to the eye with a straw yellow color and a minute and persistent perlage. The nose reveals aromas of wild flowers and dried fruit, which translate into an elegant, fresh and well-structured taste on the palate, with excellent aromatic persistence.
This champagne is ideal in combination with shellfish and fish-based dishes, even raw.
