This Champagne is the result of a rare and precious winemaking art, coming from pre-phylloxera Pinot Noir vineyards. Description

Bollinger Vieilles Vignes Françaises is a Champagne produced by the Maison Bollinger located in Aÿ, in the Champagne region. This wine is made exclusively with Pinot Noir Grand Cru from Clos Les Chaudes Terres and Clos St Jacques, high quality vineyards that represent the tradition and excellence of the Maison.

The winemaking process involves fermentation entirely in barrels, followed by aging for a period longer than double the requirements of the denomination. The wine is sealed with a natural cork during aging and has a moderate dosage of 6 grams per liter, which contributes to its complexity and aromatic richness.

On the nose, this Champagne offers an extraordinary aromatic complexity with toasted notes combined with ginger, almonds and hazelnuts, accompanied by aromas of candied pear, cooked apricots and dark chocolate. On the palate, it is round and powerful, with aromas of white and yellow pulp fruits, on a toasted background, enriched by lemon peel and ginger that bring freshness. The finish is long and persuasive.

This Champagne pairs perfectly with white caviar or white Alba truffle.
