Description
Bollinger La Grande Année Rosé is a Champagne produced by the Maison Bollinger located in Aÿ, in the Champagne region. Made up of 62% Pinot Noir and 38% Chardonnay, it comes from 11 selected Crus, mainly Aÿ, Verzenay and Mareuil for Pinot Noir, and Chouilly and Avize for Chardonnay, with the addition of 5% red wine La Côte aux Enfants.
The vinification involves fermentation completely carried out in barrels and maturation under cork for a period exceeding double the rules of the denomination. The dosage is 7 grams per liter, contributing to the structure and complexity of the wine.
The nose focuses on the primary aromas, offering a bouquet of fruit, strawberry juice, mandarin and rhubarb. On the palate, the attack is silky and anticipates a full-bodied and juicy wine, with stone fruit tones that leave room for blood oranges on the finish, giving an elegant and tannic texture, with a subtle fatness that completes the tasting.
Perfect in combination with lobster glazed with cream and citrus zest, lobster and apricot and mandarin clafoutis.
