Description

The Champagne Brut Rosé 1er Cru Cuvée Rubis from the Vilmart & Cie maison is made in the municipality of Rilly-la-Montagne, at the foot of the Reims Mountain.

Every stage of the creation of this champagne is taken care of in detail. The manual harvesting of Pinot Noir and Chardonnay grapes allows only the best bunches to be selected, after which fermentation takes place, with the addition of reserve wines, in oak barrels without subsequent malolactic fermentation and the wine always ages in wood for 10 months. Followed by refermentation in the bottle with aging in the chalk cellars for 3 to 4 years.

A bubble with a delicate salmon pink color and crossed by a fine and continuous perlage, it offers hints on the nose that recall figs, raspberries and hawthorn flowers. The palate is subtle and refined, with a mineral finish that closes on notes of orange peel.

It pairs perfectly with light appetizers, white meats and shellfish.
