Description
Clandestin's Champagne Boréal is a Blanc de Noirs obtained from 100% Pinot Noir grapes, harvested from vineyard plots on Kimmeridgian soil in the Côte des Bar. This project was born from the collaboration between Bertrand Gautherot of Vouette & Sorbée and Benoît Doussot.
The winemaking involves pneumatic pressing and natural fermentation in oak barrels, followed by long aging on the yeasts. The absence of final dosage enhances the purity of the Pinot Noir and the complexity of the terroir.
On the nose, Boréal offers fresh notes of citrus and mineral hints. On the palate, it is young, lively, with an elegant structure and a long persistence, characterized by a pleasant salinity and aromatic complexity.
This Champagne is ideal for accompanying seafood dishes, oysters and tuna tartare, enhancing the freshness and minerality of the wine.
