Champagne AOC Brut Nature Austral Clandestin

Clandestin's Champagne Austral is a Blanc de Noirs obtained from 100% Pinot Noir grapes from Ecocert certified vineyards located in the Côte des Bar. This project was born from the collaboration between Bertrand Gautherot of Vouette & Sorbée and Benoît Doussot, exploiting vineyard plots on Kimmeridgian soil with homogeneous exposure. The result is a Champagne Brut Nature, without final dosage, fresh, mineral and salty, which reflects the experience and rigorous approach of the producers.

The vinification of this Champagne involves manual harvesting and natural fermentation in oak barrels, followed by long aging on the yeasts. The absence of final dosage enhances the purity and freshness of Pinot Noir, giving the wine a strong and vibrant character.

On the nose, Champagne Austral presents fresh and mineral notes, with hints of citrus and saline hints. On the palate, it is young and lively, with an elegant structure and a long persistence, characterized by a pleasant salinity and an aromatic complexity that evolves with time.

This Champagne is ideal for accompanying seafood dishes, oysters and tuna tartare.
