Description

Bollinger La Grande Année is a Champagne produced by the Maison Bollinger located in Aÿ, in the Champagne region. Made up of 60% Pinot Noir and 40% Chardonnay, it comes from 11 selected Crus, mainly Aÿ, Verzenay and Mareuil for the Pinot Noir, and Chouilly and Avize for the Chardonnay, with the exclusive use of the cuvée.

The vinification involves fermentation completely carried out in barrels and maturation in cork for a period exceeding double the rules of the denomination. The dosage is 8 grams per liter, contributing to the structure and complexity of the wine. Remuage and degorgement are done by hand.

The small stone fruits initially emerge on the nose, accompanied by Canadian apple, classic plum and mirabelle plum, with a touch of honey. Subsequently, aromas of blackberry, blackcurrant, cherry and raspberry emerge, with a hint of almond. The finish features an exotic touch of mango combined with vanilla and fine oak. On the palate, the attack is fleshy and full-bodied, with flavors of mirabelle plum jam, a beautiful texture and great richness. The finish combines notes of chocolate and citrus, with a touch of acidity and a note of shale.

Perfect in combination with pan-fried foie gras with caramelized apples, roast duck breast with raspberry and cranberry sauce, Cantal cheese, raspberry chocolate cream and anise.
