Description
This Brut Nature is a sparkling wine produced from grapes grown on a clay-limestone terroir facing north. The estate was created in 1946 by the winemakers of Chavot-Courcourt. Chavost is the ancestral name of the village located between the Saint-Martin church and the Mont-Félix hill, on which a castle once stood. The maison produces Champagne from organic farming. This label belongs to the range of Champagnes without added sulphites.
The wine is made 100% from Meunier, with 100% of the cuvée (first pressing of the press). The winemaking takes place in 100% stainless steel at a controlled temperature, without the addition of sulphites and with a débourbage process without enzymes, tannins or carbon. No chaptalization is carried out, with spontaneous alcoholic fermentation at 17°C with indigenous yeasts and spontaneous malolactic fermentation at 20°C with indigenous bacteria.
The nose is delicately fruity and fine, with notes of small compound red fruits, apple, pear and white flowers. On the palate it is very vinous, with great breadth, and on retro-olfaction the fruity notes perceived on the nose are found, with notable finesse and persistence.
Perfect to enjoy alone or combined with refined fish and seafood dishes, fresh cheeses and light appetizers.
