Description
The Chablis Premier Cru Vaucoupin of Domaine Michaut is born in the north of Burgundy, near the city of Auxerre, from vineyards arranged along the course of the small river Serein. The climat Vaucoupin is characterized by a favorable exposure to the south-east and a soil consisting of a substrate of kimmeridgian origin based on marl and limestone alternated with tiny oyster shells set in the rock.
Obtained through a traditional type of vinification, it ferments in steel at a controlled temperature and refines for 10 months on the fine lees.
Pale straw yellow color with greenish tints. It has a pleasant olfactory register interwoven with notes of citrus and minerals. Clean and precise mouth, with unmistakable traits of freshness that gradually become more complex with the passage of time.
It goes well with oysters and salted fish, with sushi and fresh cheeses.
