Description

Reine Pedauque's Chablis is an elegant white wine made exclusively from Chardonnay grapes, grown in the northern Burgundy region along the Serein River. Its uniqueness comes from the Kimmeridgian limestone soil, rich in marine fossils, which gives the wine a distinctive minerality.

Vinification follows a traditional process with direct pressing of the grapes, cold decantation, and fermentation at temperatures between 16 and 20°C to preserve the aromas. Aging occurs in steel on the fine lees for a period of 8-10 months, with regular bâtonnage to enrich the wine's complexity.

In appearance, it displays a pale yellow hue, clear and bright. On the nose, it offers an aromatic bouquet of white fruits and a well-defined minerality that adds depth and complexity. On the palate, the structure stands out for its lively tension, remarkable balance, and a long finish with a fresh note of lemon.

It pairs perfectly with oysters, fish in sauce, white meats such as chicken or veal in sauce, and cheeses including goat cheese, Bleu, and Comté, enhancing each dish with its pronounced freshness and minerality.
