Description

Chablis Vieilles Vignes , produced by Domaine Daniel-Etienne Defaix, is an icon of the rolling green hills of Chablis, one of the oldest areas of the Burgundy region. The estate extends over 28 hectares of Kimmeridgian soil, a pre-Jurassic soil of lagoons and marine deposits, dedicated to the cultivation of Chardonnay.

The grapes are fermented and matured on the lees for 12 months, with frequent batonnage, to give the wine a rounded and creamy texture. This winemaking process, combined with the unique nature of the soil, gives the wine an extraordinary depth and complexity. The result is a wine that can be stored for up to 10 years and does not require decanting before serving.

It stands out for its sumptuous notes of lemon, lime and brioche, enriched by dried herb accents. On the palate it has a medium-high body and a juicy texture with notes of buttered bread, citrus zest, fruit and herbal honey, accompanied by a sharp and stony minerality.

Perfect to pair with classic French dishes such as escargot, fish or creamy pasta.
