Description
This Chablis of the Domaine Michaut comes to the light in the north of Burgundy, near the town of Auxerre, near the small river Serein. This area is particularly suitable for the cultivation of Chardonnay and is famous throughout the world for its limestone soil of Kimmeridgian origin, consisting mainly of calcareous marl and small oyster shells set in the rocks.
The vinification is traditional, with fermentation in thermo-conditioned steel tanks and short aging in the same containers on the fine lees.
Brilliant straw yellow color. It has a broad olfactory picture, with notes of white-fleshed fruit that intertwine with a subtle minerality. The palate is fresh and balanced, with a pleasantly citric finish.
Perfect to accompany sushi, oysters and fresh cheeses.
