Description
Domaine de Vauroux's Chablis comes from a very characteristic Burgundian terroir, characterized by the presence of millennial marl known as kimmeridge, which gives the wines accentuated mineral properties. It is a difficult terrain for cultivation which penalizes yields but ensures a greater concentration of aromas and flavours.
The vinification takes place in stainless steel tanks, with fermentation at low temperature and a final ageing in bottle that goes from 12 to 18 months.
Light golden yellow in the glass, it fascinates the sense of smell with its elegant hints of almond and flint which combine with delicate floral notes. Tasting is full, powerful, lively, with a well-sculpted minerality and a pleasantly fresh finish.
It goes perfectly with molluscs and crustaceans, white meats and mushroom recipes.
