Description
Patrick Piuze's Chablis Coteau de Fontenay is a wine produced in the terroir of Chablis, France. The vineyard from which it comes is located on a steep, west-facing slope, located behind the Grand Cru hill on the right bank of the Serein. The orientation of the vineyard and the presence of cold winds blowing from the north contribute to a unique microclimate, ideal for the development of the intrinsic qualities of Chardonnay.
Winemaking takes place entirely in stainless steel tanks, a choice that aims to preserve the freshness and mineral characteristics of the wine.
The wine has a very bright light straw color, with greenish reflections at the edges. On the nose, tones of wet slate and minerals stand out, followed by hints of nectarine and a touch of thyme. On the palate, there is a subtle strength expressed through notes of fresh pear, lime and green apple, with rocky backgrounds, dried honey and a mineral character.
This wine pairs beautifully with seafood and shellfish such as crab and lobster. Its structure and minerality are in perfect harmony with the delicate flavors and richness of these dishes, creating an ideal gastronomic balance for a refined culinary experience.
