Patrick Piuze's Chablis Vaulorent is produced from one of the most northern vineyards in Chablis. This particular location, with calcareous soils, is part of the microclimate of Vaulorent, subclimate of the Premier Cru Fourchaume. Although it shares the hill with the Grand Crus, it is not classified as such because it is located outside the municipality of Chablis.
The harvest is carried out manually for the last harvest of the season, with vinification in temperature-controlled steel tanks. Fermentation and élevage take place exclusively in barrels, without the use of new oak. In the cellar, a minimalist approach is adopted with the use of indigenous yeasts and without additions or subtractions, to ensure a pure expression of the terroir.
The wine has a straw yellow color with golden reflections. On the nose, hints of apple and peach emerge, accompanied by notes of white flowers and a marked minerality. On the palate, the wine is clean, fresh and with a persistent minerality that defines its character.
It is ideal as an aperitif or paired with fish, shellfish, crab and lobster dishes. Its freshness and mineral structure combine perfectly with the delicacy and flavors of these dishes, offering an elegant and refined combination.
