Description

The Chablis Premier Cru Vaillon from Domaine Daniel-Etienne Defaix is a premium white wine from the renowned Chablis region in Burgundy, France. Made from 100% Chardonnay grapes, it comes from vines with an average age of 40 years, planted on Kimmeridgian clay-limestone soil. This unique terroir is a pre-Jurassic soil of lagoons and marine deposits, facing south-east with a slope of 28%.

The winemaking follows traditional methods, starting with a pressing of the best grapes. Fermentation occurs with natural yeasts at 18°C for three weeks, followed by a complete malolactic fermentation. The wine is then aged on the lees for 18 months with monthly batonnage, a process that concentrates the aromas, adds roundness and imparts enzymatic qualities that guarantee a long aging potential.

On the palate it reveals a fruity and spicy profile, which emerges elegantly together with earthy nuances. On the palate it offers a rounded power, reminiscent of a butter brioche with accents of plum and rennet apples.

This white wine is ideal when paired with tasty fish and rich seafood dishes such as fish soup.
