Patrick Piuze's Chablis 1er Cru Les Séchets is a refined expression of the terroir of Chablis, in Burgundy. Its vineyards enjoy a favorable position on calcareous-clayey soils, shallow and Kimmeridgian in nature, with South-East exposure. The practice of sustainable viticulture is central to vineyard management.
The manual harvest signals the quality approach in the production of this Chardonnay. The must ferments alcoholicly in stainless steel tanks thanks to the activation of indigenous yeasts, followed by spontaneous malolactic fermentation. The refinement then continues for 12-16 months in the same steel environment, ensuring the preservation of the fruity and fresh characteristics of the wine.
Visually, the wine has a straw yellow color enriched with golden reflections. The olfactory bouquet is an enchanting combination of white pulp fruit and spring flowers, enriched by citrus notes of grapefruit and delicate chalky hints, which contribute to an intriguing complexity. On the palate, the wine is soft and elegant, dominated by a marked minerality and a fruity and citrus flavor that persists in a long and enveloping finish.
