Description

Chablis Premier Cru Les Lys by Daniel-Etienne Defaix is an elegant white wine produced in the heart of the Chablis region in Burgundy, France. This wine is made exclusively with Chardonnay grapes grown on Kimmeridgian clay-limestone soils, a pre-Jurassic soil of lagoons and marine deposits, known for their ability to impart complexity and minerality to wines. The vines face south-east, ensuring excellent exposure to the sun for optimal ripening of the grapes.

The vinification follows a meticulous process that begins with a gentle pressing of the bunches. Fermentation occurs with natural yeasts at a controlled temperature of 18 °C for approximately three weeks, followed by malolactic fermentation. The wine is then aged for 18 months with monthly bâtonnage of the lees, a practice that increases aromatic complexity, gives the wine greater roundness and develops enzymatic qualities that favor long aging.

On tasting it presents a rich and complex structure with notes of ripe fruit, citrus and mineral nuances typical of the Chablis terroir. Its freshness is balanced by a good roundness and a persistent length on the palate.

This white wine pairs perfectly with grilled or steamed fish dishes, seafood and white meats in light sauce.
