Daniel-Etienne Defaix’s Chablis Premier Cru Côte de Léchet is a refined white wine produced in the prestigious terroir of Chablis, in Burgundy, France. Made with Chardonnay grapes from vineyards located on a steep 38% slope facing south-east, this wine takes full advantage of the clay-limestone nature of the Kimmeridgian soil, a pre-Jurassic land of lagoons and marine deposits.
The vinification follows an artisanal process that begins with a gentle pressing to select the head of the cuvée. Fermentation takes place with natural yeasts at a controlled temperature of 18°C for three weeks, followed by complete malolactic fermentation. The wine is then aged for 18 months with monthly bâtonnage of the lees, a technique that increases roundness and enriches the aromatic profile, promoting a long aging potential.
When tasting it presents a solid structure and a marked minerality. On the nose you can perceive delicate notes of flowers, lychees and yellow peach, while on the palate it is round, broad and delicate.
This white wine pairs perfectly with fish dishes such as sole meunière, John Dory or noble poultry.
