Overlooking the area of the Ernici Mountains, the area between Anagni and Paliano is one of the most representative for the production of Sapiens wine, Cesanese in purity. The Federici company, which processes the typical grapes of the region, enjoys a Mediterranean climate that affects a predominantly clayey soil at 450 meters above sea level
With a moderate and perfectly suitable climate, the grapes are fermented and macerated on the skins allowing the tannins to soften and the wine to gain color. Refinement is carried out in steel for 4 months.
With a ruby red color of great intensity, it collects a varied aromatic range with hints of violet and black cherry, rose and peony, red fruits, licorice and a balsamic touch. On the palate it is compact and with vibrant tannins typical of the Cesanese. The persistence of fruity and floral tones makes it a wine of great charm.
Typical adaptation with a regional dish based on lamb and potatoes, first courses with meat sauces.
