Description
The Cerasuolo d'Abruzzo Fosso Cancelli by Ciavolich is a wine that expresses the essence of the Loreto Aprutino territory.
Produced exclusively with Montepulciano grapes, harvested by hand, it begins a maceration on the skins for 12-24 hours in small concrete tanks. Spontaneous alcoholic fermentation occurs, after which a fraction of the fermenting must is taken using the bloodletting technique, then transferred into a terracotta amphora to complete the fermentation process. The refinement of the entire mass takes place on the noble lees in amphora until bottling.
It has a clear ruby red color. On the nose it expresses itself with tones of raspberries, wine and rose hips, showing a clearly wild character. On the palate it is fresh and tasty, with good structure.
Excellent to pair with cold cuts and grilled fish, it is ideal with shellfish.
