Description
Cune Cava is a sparkling wine produced in the Rioja region, using mainly Viura grapes from proprietary vineyards and historic local suppliers. The vines are grown on clayey-limestone soils, with manual viticultural management which favors the quality of the grapes.
The grapes are harvested manually and undergo soft pressing to obtain the free-run must. The first fermentation takes place in stainless steel tanks at a controlled temperature, followed by a second fermentation in the bottle according to the traditional method. The wine is aged on the yeasts for a minimum of 12 months to develop complexity and fine perlage.
The wine has a straw yellow color with greenish reflections and a fine and persistent perlage. On the nose it offers aromas of fresh fruit, white flowers and light toasted notes. On the palate it is fresh and lively, with good acidity that gives balance and a long persistence.
This wine is ideal to pair with appetizers, seafood and light dishes.
