As the oenologist Josep Bujan defined them, the wines of the Elyssia Gran Cuvée range have something special: a blend that includes Parellada, Macabeo, Pinot Noir with the addition of Chardonnay from the Penedès region.
The production of this Classic Method sparkling wine involves the creation of a cuvée following the first fermentation and, after the addition of the liqueur de tirage, the beginning of a second fermentation in the bottle that allows the wine to remain in contact with the yeasts. at least 18 months.
It has a straw yellow color with persistent perlage. The nose reveals floral aromas and pulp fruits such as pineapple, white melon and yellow peach. Soft on the palate, it is enveloping and pleasant with ripe fruit that balances a pleasant acidity for a harmonious and balanced finish.
Accompany with punctuality raw seafood marinated in lemon, dried fruit and, as first courses, gnocchi and risotto with vegetables.
