Description

The Cava Reserva Grand Rosé Ars Collecta by Codorniu Catalonia is produced in the DO Cava, with a blend composed of Pinot Noir, Trepat and Xarel·lo.

The harvest takes place at the beginning of August, with night harvesting to take advantage of the cooler temperatures and minimize oxidation. The Pinot Noir grapes, harvested at optimal ripeness, undergo a short maceration of two hours during pneumatic pressing, followed by fermentation at controlled temperatures. The refinement in the thick-walled cellar lasts for 35 months, guaranteeing a structure suitable for long aging.

Visually it shows a salmon pink color of medium intensity and fine bubbles that form a delicate crown. On the nose, intense aromas of raspberry, blackberry and strawberry stand out, with a light touch of citrus that adds freshness. In the mouth, red fruit dominates, with a creamy sensation amplified by aging on the yeasts, resulting fresh, balanced and pleasantly persistent.

It is ideal in combination with appetizers, fish risottos, perfect with salmon and raw fish such as sashimi, sushi, carpaccio or grilled, thanks to its acidity which balances the richness of the fish. It also goes well with lightly seasoned white meats and red fruit-based desserts.
