Description

Ossian is the representation of a small universe of plots of Verdejo grapes that preserve centuries of winemaking tradition in the Voltoya terraces area. The vines, some up to 200 years old, testify to the uniqueness of its varietal richness and an almost extinct reality. This wine maintains the elegance and freshness of a unique pre-phylloxera verdejo, reflecting the genetic diversity hidden in each vineyard. Ossian is produced with grapes coming from a selection of plots distributed on the terraces of Voltoya, in locations such as Nieva, Aldeanueva del Codonal, Aldehuela del Codonal, Ochando, Melque de Cercos, Nava de la Asunción, Moraleja de Coca and Santiuste de San Juan Bautista . The sand and pebble soils, together with the harsh climate with freezing winters and hot summers, allow the development of authentic Verdejo.

Ossian is vinified in parcels: the grapes are collected in small boxes and, after light pressing, the must is transferred into vats and wooden barrels of 228 to 600 litres. Indigenous yeasts and spontaneous fermentation reflect the purity and complexity of these grapes. Before blending and bottling, Ossian ages for approximately 9 months on its own yeasts, showing its historical character and varietal richness.

Intense gold in colour, it reveals aromas of freshly cut grass, orange peel and white flowers to the nose, with toasted notes and hints of dried fruit. In the mouth it appears broad, very balanced, with good acidity and very well balanced hints of wood.

Ossian pairs perfectly with grilled fish.
