Description
The Castel del Monte Trentangeli of the Marquises Antinori was born in the vineyards of the Tormaresca farm, owned by the Antinori family and located in Apulia, on the hills of Minervino Murge.
It is mainly produced with Aglianico grapes and with Cabernet and Syrah grapes, harvested slightly overripe to enhance their phenolic potential. The grapes ferment in stainless steel tanks at a controlled temperature of 25 - 27 °C and subsequently undergo a maceration process for 15 days, with frequent pumping over and soft delèstages to perform a gradual and balanced extraction. Subsequently, the wine is placed in French and Hungarian oak barrels for malolactic fermentation, for 10 months before being bottled. A further period of bottle aging follows for a period of 9 months.
Ruby red wine enriched with purple reflections. The nose has a fruity and spicy bouquet, with pleasant hints of blueberries, mulberries and currants, enriched with notes of pepper and licorice. In the mouth it is rich and pleasant, with a good structure and a persistent finish. The aging in barrique gives this wine remarkable finesse and elegance.
Recommended to accompany first courses based on meat sauce, it is ideal in combination with grilled red meats and aged cheeses.
