The Castel del Monte Tormaresca Pietrabianca dei Marchesi Antinori was born in vineyards, organically managed, located in the Bitontino municipality of Minervino Murge, in the heart of the DOC Castel del Monte.
It is mainly produced with Chardonnay and Fiano di Puglia grapes, harvested and selected by hand when fully ripe. After a short cold decantation, the must of Chardonnay ferments in new and French oak barrels at controlled temperature and ages in barriques where it carries out malolactic fermentation. Fiano ferments separately in steel at a controlled temperature of 16-17 ° C, to enhance the notes of freshness and acidity, and subsequently assembled. This is followed by a further refinement in the bottle for 6 months before being placed on the market.
The Pietrabianca of Antinori has a straw yellow color with golden reflections. The nose opens with intense aromas of white fruit, enriched with delicate notes of vanilla and acacia honey. In the mouth it proves balanced, elegant and fresh.
Perfect to accompany appetizers and fish dishes, it is ideal in combination with shellfish and aged cheeses.
