Description
The Cannonau di Sardegna Centosere di Pala is produced in the localities of Is Crabilis in the municipality of Serdiana and Acquasassa in the municipality of Ussana, on medium-hill clay-limestone soils, characterized by an abundant presence of skeleton. The vine used is Cannonau, the main vine of Sardinian viticulture.
The harvest of the grapes takes place manually. Winemaking begins with crushing and destemming and a maceration that lasts 6-7 days, followed by inoculation with selected yeasts and fermentation carried out at a controlled temperature. The refinement of the wine takes place in cement and stainless steel containers for a period of approximately 6 months.
The color of Cannonau di Sardegna Centosere is an intense ruby red with purple nuances. The nose is fresh and intense, with evident notes of ripe pink fruit and vegetal hints. In the mouth it is dry and soft, showing good structure and persistence.
It goes excellently with appetizers, cured meats and medium-aged cheeses.
