Description

The Cabernet Sauvignon of the Boekenhoutskloof company is made in the Stellenbosch region with pure grapes.

After being harvested by hand and placed in small boxes, the grapes are transported to the cellar and selected. Cold maceration takes place in concrete for a first release of aromas and color, then fermenting at controlled temperatures with frequent pumping over. The malolactic fermentation takes place in 225 liter barriques followed by a subsequent aging of 22 months in 60% new French oak barriques.

Intense ruby red with some garnet reflections, it has a very fine nose, with notes of ripe red fruits, graphite, sandalwood and laurel. On the palate it expresses density, with a nice charge of ripe black fruits and a fine spiciness that is a prelude to smooth tannins and returns of cocoa, tobacco and spices. Excellent structure and very decisive in the finish.

Ideal in combination with pork, savory dishes such as meat sauce and timbales. It can be an excellent accompaniment to a selection of aged cheeses and cured meats.
