Description
This Brunello di Montalcino originates from the Poggio di San Polo, near the renowned town of Montalcino. The characteristics of the soil, mainly of limestone origin, present the ideal conditions for the cultivation of Sangiovese.
After the harvest, which takes place manually in small boxes in the first week of October, the grapes are softly pressed followed by fermentation in concrete tanks at a temperature of 28-30 °C for 20–22 days. After the malolactic fermentation, which takes place in French oak tonneaux, the wine ages in the same containers for 24 months before a long ageing in bottle.
It is shown in the glass of a bright ruby red colour, with a garnet nail. The nose opens up with intense aromas of violet and small red fruits, followed by light vanilla and coffee characters. In the mouth it is ample and intense, with good body, with a long finish that reveals well balanced tannins.
Delicious combination of red meats and game, both feather and fur, it goes very well with truffle and aged cheese dishes.
