Description
In the 90s, Angelo Gaja bought an estate near the Pieve di Santa Restituta, in the south-western area of the Montalcino hill, with the aim of producing wines of the highest level. The Sangiovese vines are cultivated at an altitude of about 350 meters above sea level, in an area with a temperate climate, always mitigated by the gentle sea breezes that rise inland from the coast.
The grapes come from a meticulous selection of different plots of the estate and are vinified at a controlled temperature, with maceration on the skins. The wine ages for 2 years, partly in French oak barriques and partly in large oak barrels, and ends with 12 months in the bottle.
Elegant and refined, it is ruby red with aromas of small berries, balsamic hints, hints of medicinal herbs and floral nuances of violet. The taste is mature and complex, with very fine tannins and a persistent finish.
To be combined with a cut of Chianina, a grilled fillet or game on the spit.
