Description
Caparzo is one of the oldest farms in Brunello, with the production of the first vintage dating back to 1970. It is one of the very few whose vineyards extend into different areas of the denomination, with very different characteristics from the point of view of the soil. Sangiovese grapes come from localities: Caparzo and San Piero-Caselle with sandy-clayey soil, La Caduta schistosa-arenacea, Il Cassero sandy-stony.
The cellar is equipped with cutting-edge technologies that allow it to remove not sufficiently ripe grape seeds in the early stages of fermentation. The latter takes place for 7 days in steel at a controlled temperature of 28-30 ° C. Maceration lasts as long as possible, at least for 10-15 days, then malolactic and aging takes place, first in wood for 2 years and for another 4 months in bottle.
The wine shines in the glass of a ruby red color that tends to garnet with evolution. It has an intense and fragrant aromatic range, with notes reminiscent of berries. In the mouth the sip is dry and warm, delicate but also austere, with a very long persistence.
Excellent on roasts and grilled and spit-roasted red meats, it is recommended in the company of braised and aged cheeses.
