Description

Cerretalto is the name of one of the Brunello di Montalcino that best summarizes the passionate spirit and vision of the Casanova di Neri winery. Its personality, its thickness, the figure of this wine are the most authentic expression of one of the most suitable cru of Montalcino.

It originates from small bunch Sangiovese grapes, harvested manually and selected in two steps in the first two weeks of October. The fermentation, which takes place in truncated cone-shaped wooden vats at controlled temperature, starts spontaneously without adding yeasts and the maceration flows with frequent punching down for 32 days. Followed by refinement of 36 months in barrique and for further 24 months in bottle.

It has a bright ruby red color. The nose expresses a characteristic note of graphite which is framed by a large bouquet of fresh red fruits, licorice and chocolate. The entry into the mouth is seductive and material, of great depth, in which a beautiful mineral imprint and a finely polished tannin stand out clearly.

It accompanies seasoned cheeses in general, game dishes and red meats.
