Description
Brunello di Montalcino di Casale del Bosco was born in Tuscany, from vineyards located on the gentle slopes of the Montalcino hills.
It is made with pure Sangiovese grapes, left to ferment at controlled temperature for at least 20 days. The wine then ages for 12 months in second passage French oak barrels and, subsequently, it is aged for another 12 months in large Slavonian oak barrels. This is followed by a further 6 months of bottle aging.
This wine is characterized by a deep ruby red color, enriched with garnet reflections. Its scent is clean, elegant, intense and complex, with hints of ripe berries and pleasant notes of anise with a slight hint of vanilla. On the palate it is warm, with tannins present but soft, with a great structure. It is a persistent wine, with a remarkable aging ability.
Ideal in combination with red meats and roasts, it is perfect to accompany game, in particular pheasant and wild boar, possibly accompanied by mushrooms and truffles. Also excellent with aged cheeses, such as tome and Tuscan pecorino.
