Description
This Brunello di Montalcino from the Capanna company is born in the territory of Montosoli, located in the northern part of Montalcino, exclusively from Sangiovese grapes from the oldest vineyards.
Fermentation takes place with maceration on the skins for 25-30 days at a controlled temperature. At the end of the malolactic fermentation which starts spontaneously in truncated cone-shaped Slavonian oak vats, the wine stays in the same containers for 34-38 months, followed by a further 6 months of aging in bottle.
It is presented in the glass with a hue that recalls the ruby red color, crossed by light garnet reflections. The olfactory spectrum moves on ethereal and red fruit notes, complemented by elegant notes of vanilla. On the palate it is harmonious and structured, characterized by excellent tannins and persistence.
Excellent in combination with roasts and aged cheeses, it goes well with all game-based preparations.
