Description

Campo del Drago Castiglion del Bosco is the Brunello di Montalcino obtained from vines located in the highest part of the Capanna vineyard. The Vigna Capanna rises over 400 meters above sea level on the back of a sunny hill, characterized by a rocky terrain, rich in shale and marl.

After the harvest ended in mid-October, the Sangiovese grapes are fermented in stainless steel vats at a temperature of 28 ° C, with maceration on the skins for 20-25 days. The aging of the wine takes place in French oak barriques and in large barrels of 30 and 50 hectoliters for a period of at least 2 years followed by refinement in cement and bottle.

With an intense ruby red color, it expresses its harmonic and delicate bouquet with elegant aromas of cherry, red fruits and notes of officinal herbs. The sip is complex and long, with very worked tannins and with an excellent balance between the acid part and the vibrant body. Wine with a very persistent finish and suitable for bottle aging.

Perfect in combination with important and tasty first courses such as tagliatelle with wild boar sauce, sliced beef or roast game.
