Description
This Pinot Noir from the Parent domaine is an elegant wine that expresses the typical nature of this vine grown on the clay-limestone soils of the Côte d'Or.
The manual harvesting of the grapes, selected with extreme care, precedes a pre-fermentation maceration at low temperature for 3 days to enhance the aroma of the fruit. This is followed by fermentation at a controlled temperature for 12-14 days, and aging in oak barrels for 12 months.
It has a brilliant ruby red color and offers fruity cherry notes to the nose. On the palate the wine is soft, pleasant and rounded.
This Pinot Noir is excellent in combination with cured meats and grilled red meat.
