Description
Moillard's Bourgogne Chardonnay Cuvée Signature originates in the Côte d'Or region, in southern Burgundy, where the sunniest climate favors optimal ripening of the grapes, harvested from vines aged between 15 and 40 years. The soil, rich in limestone, is ideal for the development of the Chardonnay vine.
The winemaking follows traditional methods, the best musts are selected to create a powerful, elegant and fresh Chardonnay. The cuvée is then inoculated with yeasts and cooled before being transferred to the Savigny Les Beaune site, where it is introduced into barrels for alcoholic fermentation. The refinement in barrique lasts 10 months, with a proportion of 25% of new barriques and the rest divided between barriques used once, twice or three times. The bâtonnage operation and regular top-ups give the wine richness and roundness, while the natural malolactic fermentation increases its complexity.
It presents itself with a bright pale yellow robe, embellished with golden reflections. The nose enriched by vanilla and toasted wood notes evokes floral, peach and almond scents. In the mouth it is powerful and tense, while the body stands out for its roundness and persistence.
It is a wine that pairs beautifully with fish or poultry dishes with Époisses cheese sauce, enhancing the flavors with its structure and complexity.
