Description
This Pinot Noir comes to life from the Pierre Ponnelle maison, a Burgundian outpost in Beaune since 1875, able to still honor the ancient tradition in the wake of its motto that reads "Respiciamus atque Prospiciamus", which means that it is future-oriented thanks to the strength and knowledge acquired in the past.
After the selective manual harvest of only Pinot Noir grapes, there is a maceration at low temperature in order to extract all the aromatic substances. Spontaneous fermentation with indigenous yeasts follows which gives a slight complexity.
Wine with a ruby red color, it presents notes of berries and cherry with herbaceous hints. In the mouth it reveals full-bodied and soft, with a very elegant finish.
Suitable to accompany white meats and cheeses, it is exalted on grilled vegetables.
