Description

This red Burgundy from Domaine Ponsot, called "Cuvée du Pinson", is produced with young Pinot Noir vines from the Morey Saint Denis and Gevrey-Chambertin areas. These vines, aged between 5 and 10 years, are cultivated according to the principles of sustainable agriculture.

Winemaking involves destemming the grapes and fermentation in wooden vats at a controlled temperature, using indigenous yeasts. The wine matures for 14-18 months in French oak barrels of around 20 years of average age, without the use of new barrels.

This red wine features notes of fresh red fruits, with hints of spice and a mineral finish. The palate is well balanced, with soft tannins and a pleasant freshness.

Ideal in combination with roasted white meats or soft cheeses.
