Description
The Bourgogne Hautes Côtes de Nuits from Domaine Saint Saturnin de Vergy comes from the heights overlooking the Côte de Nuits, west of the Corton forest above Gevrey-Chambertin. The soil, composed mainly of limestone with inclusions of marl and clay, helps to define the expressiveness and complexity of Pinot Noir, the main grape variety of this area.
The harvest follows traditional vinification in thermo-regulated stainless steel tanks for a period of 3 weeks, including a cold pre-fermentation maceration to enhance the fruit, followed by pressing and pumping over to extract color and structure. Fermentation takes place at a maximum temperature of around 30°C, with a subsequent post-fermentation maceration. Aging lasts between 8 and 12 months, with part of the wine aged in oak barriques, 20% of which are new.
The color is a bright ruby red, which heralds a nose rich in aromas of fresh red fruits such as raspberry, cherry and blackcurrant, enriched with nuances of liquorice and roasted coffee. In the mouth, the tannins are round, with a solid but precise structure, while a hint of acidity adds freshness and finesse to the finish, supporting the aromatic intensity of the wine.
This wine is ideal with white meats such as rabbit, lamb and duck, but also with grilled meats. Surprisingly also suitable for sweet and sweet and sour or slightly spicy dishes, such as duck with orange. It also pairs well with medium-aged cheeses such as Camembert, Saint Paulin, Morbier and Reblochon.
