Description
The Bourgogne Gamay Cuvée Pierre Delafond Hospices de Beaujeu comes from the renowned Beaujolais region in France, where the granitic soil, enriched by veins of shale and clay, gives unique characteristics to this wine. The exclusive use of the Gamay grape translates into a pure and intense expression of the territory.
Traditional winemaking takes place in thermoregulated stainless steel tanks for three weeks, starting with a cold maceration to enhance the primary aromas. This is followed by pressing under the cap and pumping over to facilitate the extraction of color and structure. Fermentation reaches a maximum temperature of 30°C, with a post-fermentative maceration at 25°C to further refine the aromatic profile. Aging takes place in barrels and tanks for a period of 8 to 16 months, including malolactic fermentation with the use of 25% new wood.
The color is a bright red with violet reflections, which anticipates an expressive nose dominated by notes of gooseberries, exotic fruits, peony and black pepper. In the mouth, the wine reveals a surprising delicacy, with soft tannins, ripe fruit aromas and a generosity that persists into the finish.
It is excellent paired with grilled or sauced meats, such as coq au vin, lamb blanquette or beef stroganoff, enhancing the richness of these flavours.
