Description
The Bonnezeaux La Chapelle of Château de Fesles comes from the Loire vineyards, from the province of Anjou, an area famous for the production of excellent sweet wines thanks to its ideal climate for the development of botrytis. This noble rot concentrates the sugars and aromas in the grapes, giving life to wines of extraordinary complexity.
It is the result of a careful selection in several steps, "tris", of the bunches destined for fermentation, with the aim of harvesting the grapes with an optimal concentration of sugars and aromas. In addition to the bunches affected by noble rot, bunches also take part subjected to natural drying, then we proceed with a slow pressing of about 8 hours. This wine matures in oak barrels for 10-15 months.
It is characterized by a deep golden yellow color. The nose is rich and intense, with aromas of candied fruit, including figs and pear, to which is added a light toasting and hints of black pepper. On the palate it proves to be an elegant wine with personality, with a fresh and persistent finish.
It goes beautifully with sauced fish and blue cheeses. To try together with foie gras.
