Description
The Bolgheri outpost of Dievole is marvellous. This Vermentino comes from here and its flavor evokes that of the sea. Born from a vineyard of only 3 hectares located in the hilly foothill area that bears the name of Botro dei Fichi , which bears the name of an ancient ditch, the "botro", already present in the documents of the Leopoldino Land Registry of the 23rd century.
Composed mainly of Vermentino grapes, it is completed with small additions of Viognier. Fermentation by indigenous yeasts takes place for no more than 20-25 days inside raw concrete vats. The refinement takes place in oak and chestnut barrels from Tuscan woods, for a duration of 3 months.
Straw yellow in color, it opens with fresh notes of yellow fruit, among which floral and aromatic herbal sensations emerge that recall rosemary and sage. White with good structure, has excellent freshness and a persistent finish.
Recommended in combination with appetizers and fish-based recipes.
