Description
The Serre Nuove dell'Ornellaia comes to light in the suggestive landscape of Bolgheri, in one of the most suitable areas of Tuscany. It can be considered the "second wine" of the estate, receiving the same attention and attention to detail reserved for Ornellaia.
It is the result of a blend of Merlot, Cabernet Sauvignon, Cabernet Franc and Petit Verdot grapes, whose harvest takes place manually in boxes, separated, variety by variety, between the end of August and the first half of October, once it has reached perfect ripeness. also from the phenolic point of view. A soft pressing is followed by separate vinification of the grapes, in steel vats, at a controlled temperature between 26 and 30 ° C and maceration on the skins for 10-15 days. After the malolactic fermentation, which is carried out partly in steel and partly in barrique, the wine remains to refine in barrique for about 15 months. Before being released on the market, there is a further period of refinement in the bottle.
Upon visual examination, Le Serre Nuove dell'Ornellaia has a young and intense red color. Intense aromas of ripe red fruit creep into the nose, accompanied by refined spicy and toasted notes. The taste is round and velvety, with great personality completed by a rich and persistent, balanced finish, enriched by slight balsamic hints.
It goes well with important red meat dishes. It also does not disdain game dishes and medium-long-aged cheeses.
