Description
The Bolgheri Superiore Maestro di Cava was born in the Tenuta Meraviglia, the Bolgheri outpost of the historic Dievole cellar.
It consists of 100% Cabernet Franc grapes which are spontaneously vinified in truncated cone-shaped vats of raw cement for approx. 13 days and at controlled temperature. The wine then ages in large untoasted French oak barrels for 24 months, followed by at least 3 months in the bottle.
Ruby red in color, it expresses aromas of red and black fruits, tobacco and leather on the nose. The sip is dry and austere, with thick tannins and a long mineral finish.
Ideal dishes based on game and lamb, both stewed and roasted.
