Description

Torre di Giano Vigna Il Pino is a Bianco di Torgiano produced on the Torgiano estate, with Vermentino, Grechetto and Trebbiano grapes harvested in mid-September. The vineyard is located on clay and limestone soil, halfway up a hill facing west, about 230 meters above sea level.

The winemaking process requires that 30% of the free-run must, obtained from soft pressing, ferments and matures on the fine lees in barriques for 3 months at a controlled temperature, while the remaining 70% ferments in steel. The blending takes place in the spring following the harvest, followed by refinement in the bottle for 1-2 years before marketing.

Intense straw yellow in color with greenish reflections that turn golden over time, this wine offers a fruity aroma of yellow peach and citrus fruits, with a floral finish. On the palate it is soft with notes of lime honey, pears and jasmine; supported by a delicate citrus acidity. The aftertaste is long, savory and mineral, with an almost saline finish that accentuates its freshness.

Torre di Giano Vigna Il Pino pairs beautifully with haute cuisine dishes, particularly based on fish and shellfish. It also lends itself well to risottos with truffles or mushrooms, vegetable flans and pasta carbonara.
