Description
Reine Pédauque's Beaune stands out for being produced with 100% Pinot Noir grapes, grown in the heart of the Côte de Beaune, offering an excellent representation of the French terroir. This area is notable for its limestone and clay soils, ideal for growing Pinot Noir.
The winemaking follows traditional methods, with direct pressing of the grapes upon arrival and cold stabling for 48 hours. Fermentation takes place in barrels at low temperatures (16-20°C) to preserve the aromas, followed by aging on the yeasts in barrels for 8-16 months, with regular bâtonnages and the use of 20-30% new barrels.
Visually, the wine presents itself with a lively shine, while on the nose it offers an intense aroma of ripe red fruits and exotic fruits. In the mouth, generosity is combined with a well-defined structure, with persistent woody notes of coffee and bacon.
Recommended with intensely flavored meats such as bœuf rôti, gigot of lamb, gibier and grilled pork, and soft cheeses such as Vacherin and Brie de Meaux. Serve at 15-16°C to best appreciate its qualities.
