Description
The Beaune AOC La Montée Rouge is produced from vines located on the Route de Bouze with a total area of approximately one and a half hectares. Pinot Noir vines grow on clay soil rich in iron and pebbles. The company has been practicing organic farming since 1998.
After harvesting, careful vinification takes place, a cold pre-fermentative maceration for five days, and a total fermentation of 18 days without yeasts and enzymes. Aging takes place in oak barrels for 15 months, with 20% use of new barrels, followed by a month in steel tanks.
The wine has a distinctive character, with an aromatic profile that intertwines red fruits with mineral and spicy notes, supported by an elegant tannic structure and lively acidity. The palate is complex, with a persistent length that reflects the unique expression of the Beaune terroir.
The Beaune AOC La Montée Rouge pairs beautifully with red meat dishes, roast poultry and medium-aged cheeses, enhancing each bite with its aromatic richness and balance in the mouth.
