Description
The Barolo Ornato di Pio Cesare comes from a small but careful selection of Nebbiolo grapes from the farmhouse located in the homonymous cru of Barolo. It is produced in small quantities every year.
It is the result of a traditional vinification in steel carried out at controlled but basically high temperatures in order to fully develop the aromatic heritage, with maceration on the skins for at least 30 days. The wine ages for about 30 months in French and Slavonian oak barrels and for a small part in barrique.
It reveals itself with an intense ruby color that can take on garnet shades over the years. On the nose it expresses a rich bouquet of small red fruits and a delicious note of licorice. In the mouth it is austere, masculine and structured, with freshness and persistent tannins.
Perfect in the company of bagna cauda and traditional Piedmontese recipes based on white Alba truffles, it goes very well with braised meats and long-aged cheeses.
